Our history

An artisan industry

Our industry has an artisan essence. Since 1927, we have combined the taste of great master roasters with cutting-edge production technology, on a ceaseless quest for excellence. We use slow cycles, because there is no better way to get the sugars to caramelize and the aroma to form. Roasting is followed by blending. The mixtures of the finest Arabica and Robusta beans are fine-tuned by monitoring and tasting on a daily basis. The quality of the coffee in every cup has been certified under the most stringent international certifications.

Carraro plants

The company operates two production facilities: one dedicated to roasting (10,000 square meters) and one to packaging capsules and pods (5,000 square meters). It also has one external warehouse and seven storage facilities, ensuring efficient logistics. Green coffee is stored in 18 silos, with dedicated spaces for decaffeinated and certified coffee. A team of 150 employees and agents guarantees quality and operational efficiency throughout the supply chain.

The roasting process

The roasting department is equipped with three roasters: two 300 kg roasters and one 600 kg roaster, with a total capacity of 2,500 kg/hour of roasted coffee. Roasting time varies between 12 and 18 minutes, at temperatures between 200°C and 228°C, depending on the recipe. Cooling takes about five minutes.

Blending

The area has 71 silos for roasted coffee beans and 50 silos for ground coffee, ensuring organized storage separated by product type. The blending phase is managed with precision thanks to five mixers, which are essential for creating blends that are consistent and uniform over time.

Packaging

Products

Daily production reaches up to 48,000 units, covering a wide range of formats and products. Coffee beans are processed in 3 kg tins and in 1 kg, 500 g, and 250 g bags, while ground coffee is available in 500 g, 250 g, 100 g, and 62.5 g bags. Additionally, pods of 7 and 10 g, unsweetened and sweetened cocoa in 250 g and 500 g packs, and cocoa drink mixes in 25 g, 250 g, and 500 g packages are produced.

Distribution

Our distribution network manages an annual production of 7,250 tons, with a revenue of €45.5 million in 2019. In Italy, we serve the Ho.Re.Ca. sector with over 2,600 bars, as well as the retail and vending channels. Internationally, we are present in more than 50 countries, reaching over 6,000 cafés. Our online presence includes both Amazon Italy and our proprietary e-commerce platform.

The origins of flavours

Every cup of coffee tells a story: its flavour changes with the seasons and harvests. For over 90 years, we have been travelling the world in search of the best quality, selecting green coffee from uncontaminated plantations. We roast it, blend it and taste it every day to offer an experience that is always excellent.

All coffee plants thrive in their natural habitats, which must be preserved. This is at the forefront of our minds when we choose to work in harmony with the traditions of local people from our coffee’s countries of origin. Similar thoughts are behind our decisions to use completely biodegradable materials for compostable capsules or paper cups and packaging, as we try to work towards a 100% sustainable future.

Quality and Certification

Our products comply with the strictest international quality and production standards. As shown by certificates that are renewed every year, they satisfy the dietary requirements of a range of religions.

Vending

This is a certification system specifically for the vending industry, with physical quality standards that have been specially designed for the blends of coffee used in vending machines.

Kosher

Kosher certification ensures that food products are suitable for consumption and that they comply with Jewish dietary law.

ISO 9001

The standards in the ISO 9000 family set out the requirements for the quality management systems used by organizations. They are general, flexible standards that can be put into practice in a vast range of business processes and fields. ISO 9001 is the world’s best known and most widely used standard for quality management systems. More than a million companies and organizations in over 170 countries have ISO 9001 certification.

BRC and IFS

Caffè Carraro is certified in accordance with the BRC (Grade AA) and IFS (Higher Level) global food safety standards. Both forms of certification are recognized by the Global Food Safety Initiative (GFSI) and they confirm that certain targets have been met in a management system focusing on the quality, health, hygiene and safety of products.

Organic Agricolture

The Organic Agriculture certificate shows that products were grown and processed without the use of chemical substances. It ensures that the production processes comply with specific requirements for the processing of organic raw materials, starting with prevention of the risk of contamination from other, uncertified raw materials.

Fairtrade

Fairtrade is the most widely recognized international ethical certification mark in the world. Its aim is to support marginalized producers in developing countries, providing a fair, transparent way for them to trade and therefore improving their standard of living.

Rainforest Alliance

Rainforest Alliance is a growing network of people who are inspired and committed to working together to achieve their mission of creating a better future for people and nature by making responsible business the new normal. Since January 2018, the UTZ Certification program has been part of Rainforest Alliance.

Halal

Halal certification ensures that food products have been processed in accordance with Islamic law.

OK compost

In order to qualify for OK COMPOST certification, products must meet the strict requirements of the UNI EN 13432 standard and undergo meticulous laboratory testing. OK COMPOST is based on more than 20 years not only of Research and Development but also of analysing, assessing and registering packaging materials, which has led to the creation of one of the largest international databases in the field.
